Healthy but filling lunch recipes?

Hi all,

Need some inspiration for new recipes to add to our rotation! The best way to make sure we have good lunches at work is to make 2 x recipes for 4 on Sunday, which then gives us 4 days of lunches for two people.

A few recipes we've had success with in the past are chicken and chorizo jambalaya, cous cous with chickpeas, veg and halloumi and a veggie orzo. Soup just doesn't cut it for lunches as we get too hungry! If anyone has any other recipes which are filling, involve a fair amount of veg and work well for lunches please share them 😀

This is delicious and filling. It works well as a packed lunch and can be eaten hot or cold. For some reason the photo doesn't match the recipe but anyway...

Mince is really versatile for lunches, I bulk it out with loads of veg so I don't feel the need for a side with it.

500g beef/pork/turkey mince
2 red onions
2 bell peppers
Punnet of mushrooms
3 or 4 carrots
Tin of chopped tomatoes

Then add whatever packet of seasoning mix you like - bolognese, chilli, shepherds pie, casserole,

I do a lot of grain salad things that mostly act to use up the ends of stuff in the fridge.

Recently I’ve done harissa bulger wheat with roast shallots, sprouts and carrot, pomegranate and rocket and (separately) minty bulger wheat with the end of a celeriac remoulade, grated carrot, quick pickled red onions, pomegranate, rocket and feta.
