To my house guests this weekend? One of them is extremely picky and won't eat any veg. I'd normally do a rice dish with veg mixed through, but wondered if anyone had any better ideas?

Angel Hair pasta
side dishes of green salad and frozen mini corn cobs slathered in butter and frozen fine string beans with sauted diced bacon and shallots fried off and stirred through at the end. Ciabatta bread rubbed with olive oil and raw tomato and toasted under the grill for contrasting texture

chocolate mousse for dessert

i've got a recipe for garlicky scallops with vaguely fancy mashed potato... i can't remember off top of my head what was fancy about the mash potato but can have a look... or does mash count as veg?? (i mean, i know potato is a veg, but even my veg phobic dp will eat it...)

why thankyou suzywong, looks like you put a bit of effort into that. (or is it something you make alot?)
Funnily enough I was thinking about doing a chocolate mousse, although they're no really "dessert" people. I am though

Flier · 20/03/2008 14:02

LadySanders, I think he'll eat potato. If you wouldn't mind digging it your recipe out that would be lovely of you, tia

Twinkie1 · 20/03/2008 14:02

If she will eat tomatoes cook scallops and prawnswith some garlic, butter and chilli and then add some baby toms and then some cooked tagiatelle or spaghetti - yummy yum yum!

Flier · 20/03/2008 14:03

CountessDracula, yes very odd. The last time they visited I did a spag bol with some veg chopped up very small, just like I do for DC's. He detected them. Picky people really bug me

I love rocket with prawns and scallops... but they probably they don't eat that either!

Flier · 20/03/2008 14:07

some nice ideas here, I do fancy doing it with cherry tomatoes, but not sure if he'll go for that. I'm a bit scared of doing it as a risotto, never been too successful with them yet. I'm tempted to just get in a cheese pizza for him and the rest of us will enjoy the lovely seafood! [smile}

sorry took a while with ds1 on easter holiday and newborn ds2 on a serious grizzle... it was sizzled scallops and prawns on porcini and truffle mash, basically normal mash potato but mixed with a jar of waitrose porcini & truffle sauce. then the prawns & scallops pan fried with garlic, lemon juice, and served with watercress leaves.

Flier · 20/03/2008 17:29

hmm, that does sound nice. think it'll be pizza for the picjy guest lol!
thanks for that and thanks everyone else.
