Red cabbage - too sweet!

I put too much brown sugar into Delia red cabbage and now it’s too sweet! Any ideas? I’m thinking either more cabbage to dilute the sugar, or the internet says more acidity for over-sweetened thing, but I don’t really want it vinegary and sugary! Thanks!

Add a small amount of vinegar to balance it.

Lemon juice

Thank you! You think the more cabbage idea is a bad one?

You do need to add the vinegar. It’ll work!

BirdsAreDinosInDisguise · 27/01/2024 10:23

More cabbage would work - but do you want that much cabbage?

GrumpyPanda · 27/01/2024 10:28

More cabbage is best. Flabbergasted there is at hearing about a recipe that puts ANY sugar in red cabbage (and I'm fairly generous about sweetening brassica.) The most I'd do is add caramelized apples.
Regarding acidity - does the cabbage already have wine in it? Although I'd normally do red wine or port with it.

OMGitsnotgood · 27/01/2024 11:53

Personally I'd give it a good rinse, taste and re-add the flavourings that are missing

Beekeeper22 · 27/01/2024 11:53

I’ll try more cabbage and maybe a sample with vinegar! I’ll happily freeze any surplus :)
its Delias braised red cabbage. It has brown sugar but I didn’t really pay attention to quantities as I’ve made it load before! Just added too much sugar

Red cabbage freezes fine if you wanted to add more cabbage.

kitchenplans · 27/01/2024 19:36

Ooh I'm making some tomorrow, and this is a really good reminder not to just eyeball the sugar!

I'm not really sure how to fix it, but I can confirm , as a PP poster said, it really does freeze well. So maybe make another batch without sugar and mix them together and then freeze half.

HeyMicky · 27/01/2024 19:45

I would look at balancing other flavours - maybe or age juice for more acidity without the vinegar, and some cinnamon and pepper for some bite

You can freeze it.

CaptainMyCaptain · 27/01/2024 19:57

I don't actually put any sugar in mine just a sweet apple and maybe some cranberries or raisins.

Beekeeper22 · 28/01/2024 18:13

I can confirm I fried up another 3rd or a cabbage with some nutmeg and butter and seasoning then I chucked it in with the original batch and it totally saved it! V pleased. Thanks all for your help!
