Can I have some ideas for when I have friends over?

Having some friends over this week. 6 of us, very casual and relaxed but we do like to make and eat nice food when we are all together. One veggie, and one person who doesn’t consider it a meal unless it contains green veg.

I have seen a recipe for chicken legs with apricots and dates which I want to do and a veggie tray bake thing from The Roasting Tin book of aubergine and fennel gratin with goats cheese and walnuts. Feel I need one more veggie thing, maybe green veg but tarted up a bit for the veggie? Or shall I just do roasted new potatoes too, and a green salad?

What about Tabouli salad? Very green with all that parsley and I think would go nicely with the chicken dish.

Roasted cauliflower is a lovely change from just boiled / steamed. Could add broccoli as pp says and add some sesame seeds to make it a bit more interesting. Bonus v easy to make too 🤩

Roast butternut squash and courgette with couscous and rocket/spinach is really good.

Some lovely ideas here! Think I may just go for the savoy cabbage, some thing simple!

So
chicken with dates and apricots
savit cabbage with almonds
aubergine and fennel gratin with goats cheese and walnuts
Baked polenta

I know the polenta doesn’t necessarily “go” but I just love it

I was also thinking a roasted mushroom dish with pomegranate molasses I think that might be a bit much?

I was going to suggest roasted tender-stem broccoli but I think savoy cabbage is a good shout.

Yes it was delicious wasn’t it and super easy!
@BirdsAreDinosInDisguise sorry I didn’t post the gratin recipe but I will dig it out. It was a tadge too goats cheesy tbh.
