High protein veggie

My dh has night cholesterol so trying to cut out red meat and increase veggie meals. How do I make sure we are having enough protein as rely on meat for that generally.

Also if anyone has nice recipes?

this is nice, but I swap the orzo for Quinoa for extra protein, I reduce the cheese and butter in the dumplings and only makes a small amount too so lower fat. The parsnips can be overpowering so you can just leave them out.

We use a lot of soya beans ( edamame beans ), you can get them fresh or frozen. My daughter is vegetarian and not keen on meat substitute so these are a good source of protein.
My husband has high cholesterol and I’ve managed to lower it by simply cutting down on meat, he eats more fish now, I’m sure you’re aware things like processed meats are bad. But there are a lot of foods which lower cholesterol.

I would focus on chicken and fish and lots of veg. I have never had higher cholesterol than when I was vegetarian - I think it was actually all the carbs and the cheese that did it. You tend to rely on a lot of starchy carbs and cheese when eating vegetarian. I would go high protein, even if some red meat, and lots of veg, fewer carbs. Also, exercise and lose weight.
