What can I do with split red lentils?

If it makes any difference I'm a single person so don't want to make batches of the same thing!

I'm not vegetarian but I am trying to cut down the amount of meat I consume. I'm also trying to lose weight.

I don't like beans or peas.

I have made a lovely ratatouille ( in slow cooker) and then added about 1/2 as much lentils to it.
... and then made it into a lasagne. 😋

You can freeze the ratatouille & lentil mix for another meal!

Red lentil and tomato soup is delicious.
