Grated parsnip

I have some parsnips I need to use up and a delicious recipe for parsnip cake, but last time I made it I absolutely hated grating the parsnip! Is there anyway I can get around this? I don't have a grater attachment on my food processor, but I was wondering if I could just blitz the parsnip into tiny chunks instead of grating - I don't know if that would affect the bake though?

Any ideas?

I’m guessing that the finer you grate it, the less chance there is of coming across lumps of parsnip in your cake. I’d grate it if I were you….and think of the delicious cake at the end.
