Got a red cabbage left over from Christmas. Anyone got an actually nice recipe?

I've never really managed to do a nice red cabbage recipe despite trying loads (Delia, BBC etc.) Has anyone got one that's really good?

I've got no raisins (but could substitute dried apricots if the recipe calls for them) and no red currant sauce (but could substitute cranberry and port sauce). Also got no cooking apples.

Anyone got anything? Thanks!

I would do a winter coleslaw type thing to have with something

I’d say coleslaw too. Often use red cabbage for that.

I found this on a blog a few years ago - luckily I wrote it out , (the blog seems to have disappeared ) . Its a favourite here now , and it freezes well too
Microwave Red Cabbage
one half red cabbage, shredded
one finely chopped white onion

plenty of ghee- lots!!
salt & pepper
1 scant tablespoon sugar
3 tablespoons cider vinegar

mix well in a casserole dish
Microwave on high for 15 minutes , stir occasionally
Microwave on high for 2 minutes a time after this until cabbage is soft ( may take up to 25-30 minutes all in )
Check salt and seasoning

I make a sort of Thai/Asian slaw with it, shred the cabbage, grated carrots, finely chopped onion (any kind basically fine), add a load of crushed peanuts (cashews also nice) add some vinegar (preferably rice wine but any again is fine), sesame oil if you have it, lime juice (or lemon) and mix it loads. Really nice as a side but also just lovely and healthy to munch on its own.

This mango salad with peanut and lime is delicious with the sweetheart cabbage substituted for red.

Udon noodles with cauliflower and red cabbage is also a good recipe.

DH often pickles leftover red cabbage and then we use it for all sorts, tacos, salads, wraps etc.

I shred mine raw in a food processor, add olive oil, salt and vinegar to taste. It’s soooo good!!!

Yes, I'd use it in a sort of slaw/pickled salad.

It also.works well in stir fry.

I did this one yesterday but didnt have any red wine vinegar so used the same amount of balsamic vinegar but added another 100g of sugar as I felt I needed it sweeter.

Its fanstastic, glossy and black

However I only used half the cabbage and theres tons of the stuff, have put a lot in the freezer.

Bumping this thread as I'm looking for a red cabbage recipe for Christmas day but the family aren't keen on sweet spices. Any other ideas? Something that can be made ahead and reheated in the microwave would be ideal given lack of hob space.

I like sweet and sour red cabbage. It’s got RC and cooking apple, vinegar, brown sugar etc. Tastes great, freezes well. I used to make in batches and eat it on toast when I was a student!
