New year dinner inspiration /easy dinners

I cook almost everything we eat. I do have quite a long list from what we cook and somethings are seasonal.
im still feeling a bit stuck in my ways, especially in the easy midweek bit. We have a chips/freezer night and a pasta night. I’ll make soup usually and a few other things.
what I’m trying to get away from is pasta or too much meat.
The only food issue is no seafood, DD has a big list of no eats and eats separately.

any ideas?

Tray bakes are so easy. Cut up a bunch of seasonal veg, add a relevant seasoning. I cook a protein separately often to suit vegetarian/not.

Some repeated combinations we like are
peppers, courgettes, tomatoes
butternut, brussels sprouts, parsnips
peppers, potato, chickpeas, onions (add feta and it's great!)

My easy dinners -

stew (stewing steak, onions, carrot and packet of oxtail soup) for six hours

pork chops on a tray of baby potatoes, peppers onions etc and bbq seasoning for one hour in the oven

salmon broccoli and mash (easiest)

chicken fajitas

curry, stew (and stick shop bought puff pastry on second day for a pie), ham/egg/chips, bolognaise/chilli/lasagne/shephers pie using the same base meat mix over several days, marinades that are meant for BBQ - olive oil/garlic/soya sauce/honey/ginger. honey mixed with oil and curry rubbed on things.

posting mainly as i too am bored.

I'm going to chuck a stir fry together tonight, can't get much easier than this, chop it up, chuck it in stir it about to heat & eat! we used to have them often but not for a long time . I've got a new wok so I want to start stir frying regularly again

Im seeing a lot of things we have on the replies. Maybe I have just hit the ultimate wall of dinners!
I don’t have frajitas anymore as I sickened myself with them 😂
