One pot / slow cook dinners

I’ve set a resolution to reduce stress on a busy night of the week by having a slow cooked dinner ready to serve when I need it. If it can be high protein but low / no legumes all the better.

Feeling uninspired so hoping you can help.

I was going to recommend pea and smoked ham soup, but there are split peas in it!

I've made this many times, and vary it often. I normally add pearl barley and extra veg and don't add the pastry. I've also used beef cheeks when they are cheap. Highland beef with pickled walnuts & puff pastry tops recipe | BBC Good Food

I've also cooked a lasagne in a slow cooker! Almost as much effort as the regular sort, because it needs pre-cooking anyways, but might be something else to try. Replace the pasta sheets with low card veg. Maybe moussaka too.

Thanks. Beef sounds yum. Love split pea soup but legumes don’t like me.

To add, the beef stew mentioned above, I often don't add the amount of port/beer mentioned in the recipe either. Maybe a can of stout and some port, but depends what I have. I often bulk it out with more veg, but depends what you can eat and have in the fridge.
