Can I make this with gluten free flour?

I can easily convert cake recipes to GF, but I don't know about biscuit recipes.

This is the recipe:

Beat together 90ml olive oil, 160g soft brown sugar, 60ml milk.

Combine 200g plain flour, 1/4tsp baking soda, a pinch of salt, 150g dark chocolate (chips or grated) in a separate bowl.

Stir wet and dry mixtures together.

Spoon in mounds onto a lined baking tray. Bake at 180C for 15-17 minutes.

It's quite a 'wet' recipe. Would I need to add more liquid if I sub the PF with Doves Farm GF PF?

The wetness would probably help, maybe add a quarter a teaspoon of xanthan to it to help it bind.

Not sure if these are crisp biscuits or softer American cookie type ones. For crisp biscuits I sub the plain flour with 1/3 almond flour, 1/3 tapioca starch and 1/3 oat flour, because I don't like the gritty texture of rice flour. I'd use the raising agents as in the recipe and maybe add a pinch of xanthan gum. I haven't tried olive oil biscuits though!

I made the biscuits as the recipe, subbing GF PF for regular PF and adding xanthan as suggested.

Biscuits are delicious, but the texture is both more oily and more gritty than with regular flour. Gritty texture I suppose is to be expected with GF flour. I think next time I'll reduce the oil slightly, and bake for longer.

They are soft biscuits.
