Batch cooking recipes

Hello!

I’m planning on spending a couple of days batch cooking next week to get ahead for days when we do long shifts. Does anyone have any recipes they can recommend? I feel I’ve exhausted the spag Bol/chilli recipes.

we don’t really eat red meat/fish but will eat mince and cod 😂

I'm going to be spending the next few days batch cooking and freezing portions. I will be doing:

Chicken and mushroom soup (with bone stock and leftover turkey from Christmas dinner)
Pea and ham soup (with leftover gammon and stock from Boxing Day)
Tarka daal
Chicken, leek and potato soup
Broccoli and Stilton soup with all the leftover cheeses
Gobi aloo saag
Chicken tikka (frozen in portions to have with the daal/gobi)
Cheese and onion pasties to freeze uncooked
A huge batch of chocolate cookies, frozen as uncooked dough balls in bags of 12
Seeded bread rolls and individual soda bread loaves
Cherry and coconut flapjacks
Generic pasta sauce
Katsu curry sauce

It means I won't have to worry about meal planning and cooking for a while, so I can concentrate on getting back into my work etc, and I'll be using up various bits from Christmas and clearing out the fridge.

I batch cook some meat with Mexican spices and loads of veg then use it for either tacos, fajitas or enchiladas midweek

Ratatouille, curry, tagine, casserole. Watching with interest as we live on 'rat' and curry.

A big pack of chicken thighs, sliced onions, peppers and garlic, packet of fajita seasoning (I always add chilli flakes as like it spicier), a can of black beans, a can of sweetcorn - cook it all together in a slow cooker or on the stove / oven. Can freeze it in portions and defrost to use as a filling for fajitas / tacos. Or I like putting the mixture over potato wedges and topping with cheese.
