As the title says... what are your top tips for:
a) leftover (completely cooked) Christmas pudding - aside from ice cream.
b) leftover mincemeat

Invite me over😂i would just eat Christmas pudding with hot custard- probably after every meal till it had gone. How about a crumble with the mince meat? Pad it out with some apples if necessary. Enjoy

Imicola · 30/12/2023 08:19

And for Christmas pudding, how about a cheesecake?

BCBird · 30/12/2023 08:21

Planned on making my own mincemeat- didn't happen

We've made mincemeat chocolate brownies before, they were amazing. Can't remember the recipe but there are loads online.

festivefoodlover2023 · 30/12/2023 08:30

@BCBird - I would too but it is slightly dry... any advice for reviving it if I did just have it on its own?

Mincemeat and apple crumble for the freezer

Christmas pudding I would slice into wedges and also freeze, for future bonus desserts through the year!

Imnotadentist · 30/12/2023 08:56

Christmas pudding can be used to make a delicious tart. Blind bake a shortcrust pasty case. Crumble the leftover pudding over the base and top with an almond frangipane (ie cake mix made with almonds like for a Bakewell tart). Then put back in the oven to bake.
This recipe came from the Kitchen Cabinet on Radio 4 and the chef suggesting it said it was even better than Christmas pudding- and he wasn’t wrong.

Mincemeat and apple strudel or palmiers

Christmas pudding can be added to rocky road/tiffin

Make mincemeat vodka

I think mincemeat could be nice in porridge or overnight oats

Add to a trifle base

Blend the Christmas pudding with digestives and a touch of butter to make a festive biscuit base for desserts such as cheesecake, treacle tart or egg custard

Either would work well in a flapjack mix/ chewy bars

Stamp out the Christmas pudding with a heart shaped cookie cutter and use it as the ‘heart’ in a hidden heart cake (see pic for idea). Just make a plain sponge loaf mix to go around (though an apple and almond flavour sponge would go well I think, actually I think that would be great!).

I wish I had leftover Xmas pudding now!

Mincemeat: use instead of the strawberries in this yummy almond torte recipe.

Fill croissants with a generous spoonful & heat through in the oven.

Mincemeat steamed sponge.

mincemeat cake

Christmas pudding: melt a knob of butter in a pan, stir in crumbled pudding and warm through, serve over ice cream (I know you said not ice cream but wondered if you meant to make Christmas pudding ice cream- apologies if not)

What about a christmas pudding bread pudding, would that work?

Duh · 30/12/2023 10:04

@OMGitsnotgood i love the croissant idea!

OMGitsnotgood · 30/12/2023 10:10

@Duh I sometimes make these on Christmas morning. You can grate marzipan in too. Usually also have ham and cheese croissants, baked until cheese melts

BarneyMcBugle · 30/12/2023 10:12

Mincemeat lasts forever.

Put it in a sterilised jar and use it next year.

PoppyGG · 30/12/2023 10:20

I always make a Christmas pudding trifle with the leftovers - it's become an annual tradition. Even the Christmas pudding haters look forward to it. These are some of our favourite versions.

@Imnotadentist this sounds really lovely - my Christmas pudding is rather dry, would it still work?

I think it would work fine

TheSandgroper · 30/12/2023 15:01

Christmas pudding from over a year ago is divine. It ages like a good port. Mincemeat if done properly should keep and if shoved to the back of the fridge for the year will keep.
