I'm so bored of my usual repertoire! Please give me some inspiration for the new year of veggie recipes that are genuinely quick and easy, that I won't mind cooking at the end of a long day in work.

Trying to get healthier so looking for stuff that is nutritious and not overly processed, but also that we can actually enjoy eating so that we stick with it!

Should add...we currently have an instant pot, a slow cooker and a microwave as well as the standard oven/hob.

I am contemplating the purchase of an air fryer but not yet convinced that it won't end up as just another barely used appliance in my kitchen...

TIA in advance for all suggestions.

I do a sweet potato and chick pea curry in the slow cooker that is delicious, can add spinach at the end

This is really good and doesn't take much effort. Sometimes we skip the sweet potatoes and have it with rice instead

Off topic a little but doesnt your instant pot do air frying? One of my quick teas is big mushrooms baked with halloumi and served with salad or spicy wedges with coleslaw or mayo.

Take a look at the Green Roasting Tin book, we do loads out of that. Mostly one pan, chuck it in the oven type stuff - great for when you're lazy after work!

Re the instant pot...I don't know? I will investigate. It was passed on to us by a friend who moved abroad, and I haven't yet made great use of it, I'm afraid!

And vegan is good... I'm not ready to give up eggs and dairy completely but definitely trying to eat less!

The Hairy Bikers have a great veggie cottage pie recipe with Indian spices - one to make on a Sunday and then put in the fridge for the next day.

Have a look at the buttons on the front. Mine has air fry on the left side and then you press start. 20 mins for most frozen things hits the spot.
