Soup- parsnip and carrot?

Hi

I have 1 parsnip and 3 carrots uncooked. I was going to make a soup out of them.

Does anyone have a good recipe for parsnip and carrot soup please?

Veg stock, garlic, onion, turmeric and curry powder, boil then whiz it, favourite with family and friends

It's lovely if you spice or curry it!

Fry an onion (if you've got one) in 1tbsp of oil and 1tbsp butter. Then finely chop your parsnip and carrot and stir them in. Cook for a few minutes on a low heat. Add a tbsp of curry powder. (Or a tsp of paprika perhaps instead.)

I sometimes chuck in a chopped potato to thicken if I've got one. But basically then just add a litre of stock and bring to the boil. Simmer for about 40 mins.

I can't be bothered to blend - I usually just mash up a bit with a potato masher once it's done. It's lovely.

I like cumin.

A pinch of ground coriander seed is good, too, because it brings spice flavours together into a harmonious blend somehow.

I do:
couple of carrots - sliced
couple of parsnips - diced
couple of leeks - sliced
couple of potatoes - diced
swede - diced, if I can get one
onion - diced

Fry it up with salt, pepper and a bit of dried thyme. Add stock and a couple of handfuls of red lentils. Cook. When it's done, mash it a bit with potato masher to thicken. The parsnips make it lovely and sweet.
