Ricotta and lots of it - what on earth?????

Am I going to make with it all?
Not sure exactly how much there is, DH is bringing it home later.

Any ideas what to do with a load of this cheese?

Spinach and ricotta lasagna - can make loads and freeze
Ricotta and honey on pancakes (lovely lovely lovely)
Ricotta and tomato pasta sauce - again make lots and freeze

Exactly how much ricotta are you getting, and why / how??

No idea how much of it yet.
DH's store has a load reduced due to it going out of date - down to 19p!?!
I'll have to do something with it by tomorrow I guess, so making things and freezing sounds like a great plan.
