Prawn prep

We're having prawn cocktail for starter today. I've got a load of prawns and they're defrosting now.

Am I better deshelling them before I cook them, or do it after they are cooked, or should I boil from frozen, though I assume they'll be overcooked if I do that? They are big tiger prawns.

Not boiled. I've cooked them in a frying pan with chilli, garlic, butter.

Because dh's family always have prawn cocktail as a starter so it's one of his bits of Christmas.

Yes, he used to be a chef but I'm doing it this year.

I just wanted to double double check how to do it because I don't want the prawns going rubbery or being ruined.

I've boiled them now anyway and peeled them after cooking.

more baffled then why you didn’t ask your chef husband who has done this dish multiple times in the past!
