I want to bake a cake but I just have one egg ! Any ideas ????

What else do you have? Do you have chocolate/cocoa?

What about pancakes? With a sweet filling? I'm sure you could make pancake batter with only one egg if you reduce the amount of flour.

Aha, I've found Georgio Locatelli's eggless chocolate cake (devised for his allergic daughter):

450g plain flour
6 tbsp unsweetened cocoa powder
2 tsp baking powder
2 tsp bicarbonate of soda
300g caster sugar
125ml vegetable oil
300ml water
2 tbsp distilled white vinegar
2 tsp vanilla extract

Sift all dry ingredients together; mix wet ingredients and add. Beat until smooth. Pour into an oiled 23cm cake tin and bake at 180C for 1 hour. Leave to cool before slicing in half horizontally, if you want to fill the cake with a vegan icing.

blackberries will be fine

ok

9 oz sr flour
6 oz granulated sugar
1/2 tsp salt
1 tsp baking powder (if using plain flour make this 3)
blackberries

inbowl and mix

3 oz veg oil
9 oz milk (if dried fruit add a bit more milk)
1 tsp vanilla (optional)
1 egg

and mix

mix wet into dry till just mixed cook 180 for 20 mins

if using fairy cake sized cases and not muffin cases then reduce time 15 mins

if you don't have fan oven increase temp to 190

4 - 6 oz sugar = 110 - 170g
3 fl oz oil/butter = 90ml
