Anyone Par cooking their Christmas veg today?

I'm thinking of par- boiling my potatoes and other veg and finishing off with olive oil etc and placing in the fridge to bake tomorrow.
I've never done this - do they turn out good still?

I would also like to do this, but am worried the potatoes will go black. I am going to do my stuffing balls and pigs in blankets though, ready to shove in the oven tomorrow.

Yeah I always parboil my veg in the evening of Christmas eve. I drain them and dab them dry with kitchen roll then drizzle them in oil when they are ready to roast the next day

I've just done mine, parboiled, drained and allowed to cool and then coated in goose fat and into trays. I do it every year and they turn out fine. The potatoes and parsnips do look slightly discoloured but look normal once cooked and are usually crisper than when cooked in one go

I’ve fully cooked the carrots and mashed potatoes. Now cooking in Pyrex and will just be reheated in microwave tomorrow

Spuds parboiled and bagged with sunflower oil.
Parsnips and carrots prepped and bagged with oil herbs and honey.

They don't taste stale or anything. I prefer them done the day before , as opposed to when I parboil immediately before roasting, as I tend to do for a normal roast.

I did potatoes on Thursday. Parboiled, coated in flour salt pepper and duck fat and froze in a tray. We had one tray today and they were delicious.

I peeked, par boiled and froze my spuds and parsnips a few weeks ago, just took them out the freezer, but in the past I have cooked from frozen.

Carrots and sprouts proper this morning by DD. Cauli cheese made - I made extra cheese sauce and froze it last time we had mac cheese. Feel like I am winning at cooking, if nothing else.

Doesn't reheating in the microwave ruin the texture? Nothing ever comes out crispy IME.

I don't personally I do everything on the day, the potatoes go brown which I don't like accept they probably cook ok.
