Christmas roasties...help please.

Hi, I have just cooked a humungous about of roast potatoes,they are almost fully roasted, a little under the time I would usually cook them for . My intention was to freeze them and then cook in oven again on Christmas day from frozen. I thought this was the correct way to do it, but now I've googled it, it looks like you're supposed to roast them after par boiling !! Can't find anywhere really that says roast, freeze, roast again. Anyone done this before ? Do I need more oil when I re-roast ? Cover with foil for a bit then remove to crisp up again ? Or not ? Thanks in advance .

We do this all the time. Put them in the oven with a spritz of oil straight from the freezer for about 40 to 45 mins on 180. Don't do them for longer as they come out 'touched'. It's our quick way of having a mid week roast as we cook masses on Sunday and we've got them ready to go later in the week

I do the same as CLB1234 - I never freeze just parboiled potatoes but always at least part roast them before freezing. I've never timed them but agree with no longer than 40/45 minutes - possibly less depending on how close to fully cooked they are currently. Just check on them now and again.

If I was in your kitchen right now very few of those babies would even make it as far as the freezer Grin

Thanks, that's great. 3 potatoes down already. Blush. Can't help myself either ! What oil do you spritz with ? Have cooked with sunflower? A sunflower spray ?

I use rapseed oil as it's the one we've got in the cupboard, we cook in vegetable oil so don't think it matters
