What to do with fresh coconut?

Buy a coconut mummy, I want to eat a coconut!

Mummy buys the coconut.

I don't like it.

So what would you do with a fresh coconut?

I would make a korma with it.

I don't have a recipe suggestion, sorry, but that is absolutely what I'd chose!

Turn it into a tropical salad with pieces of apple, mint and slivered almonds

Grate and use in curry

Grate it into milk and use it in a rice pudding/porridge

Process it with milk and frozen banana to make a milkshake. Spike it with a bit of rum too if you like.

Toast and sprinkle on outside of truffles

It freezes quite well. Break it into pieces first though.

Thai sticky coconut rice is delicious.

Make some pat biscuits with coconut.

Curry

Coconut fudge

Dry it and make a cereal topper
