The holy grail: a decent gluten free bread recipe?

Anyone got any recommendations? I've tried Becky Excell's tiger bread and soda bread recipes and they were awful. Really stodgy and with a weird flavour and texture.

Surely there must be something better out there?! I feel like if GF cake is easy to make, bread can't be that hard, right??

I've given up trying. Warburtons GF tiger bread makes decent toast, and Schar frozen dinner rolls bake up as decent crusty rolls which I use as rolls and in lieu of a sandwich.

I recently ran a bread making event for kids and there were 2 coeliac kids. I used the gluten free bread recipe from https://www.freee-foods.co.uk/recipes/free-from-white-bread

The kids said they liked it but I didn't taste it myself.

The problem is, bread is gluten. That’s why you knead it - to work the gluten and make it chewy. With cakes you work them as lightly as possible so as not to lengthen the gluten strands.

Sorry OP, I make fairly decent wheat bread and GF cakes but have also given up making GF bread.

Becky Excel pizza bases are ok, but I usually just use the Schar ready made plain bases as it's a lot of effort for "ok".

I just made Becky Excell's dough ball wreath with baked Camembert in the middle and honestly it was fab.

Thanks all. This is actually for my recently diagnosed with coeliac DC who is finding it tough. I've tried to be supportive by tasting some gf bread and looking enthusiastic but my acting skills aren't that good. I've promised I will.make it my mission to find a decent recipe!

@IHeartKingThistle interesting- I bought all of Becky E's books after reading MN threads but haven't been all that impressed with them so far. That said, I'm open to trying anything. Do you think the dough wreath would work made into rolls?

It's in the Christmas book. Yeah it might but it's not a yeast dough, it's yogurt and there's cheese too so it's quite rich! I loved it though.

I do wonder sometimes whether some of the hype around "amazing! Just like the real thing!" GF recipes is simply a reflection of how long it's been since some of us have had decent bread / doughnuts / whatever! I've also given up trying to make decent GF bread - I feel like if the professionals can't manage it (and there's a huge financial incentive for them to try!) then I probably can't either.
My favourite shop bought bread at the moment is the sliced "white and wheat" from Asdas own Free From range. Toasts really nicely and has a sort of nutty flavour.

We've given up on finding a decent gluten free homemade bread.

It's warburtons tiger loaf, warburtons soft square rolls and sainsburys handfinished sliced tiger loaf here.

I've been gf 26 years, and although gf bread has come a long way from the bread in a tin you got from Boots when I was first diagnosed, its all pretty rank. I eat Warburtons GF tiger loaf for toast or a sandwich when its really fresh, but it is in no way, shape, or form like real bread.
For pizza bases I make brazilian cheese bread which as it is 50% cheese is lush, and it doesn't pretend to be normal pizza base.

I've tried all the shop breads and the texture is just like having a mouth full of sand. Awful. I can't see how making it yourself would be any better. It's rubbish isn't it!

This is exactly the problem. It's fine with gluten free cakes because they don't rely on gluten (and you often try to avoid overworking it) but bread relies on it so heavily.

I've not tried her bread, but made Lemon and Poppy Seed Swirls by the Loopy Whisk and they were the closest to "real" bread we've had. It's my husband who is coeliac, so I can compare more directly with proper bread.

These are good, though best on the day they're baked (like pretty much all GF bread). I've tried a lot of other recipes on this site and most are good, the French bread especially, but you really do need to make the flour mix instead of using shop bought GF mix
