We’ve got friends coming over for supper on 29th December. It’s going to be a relaxed evening with DC there too (DC have requested beige food).

I’m stuck for what to make. I’d like it to be straightforward (we’re hosting DH’s family the day before) but still a bit special. The only limitation is no meat.

smoked fish risotto or fish pie perhaps? Risotto would be much easier.

One pot for serving or for cooking?

For serving:
Veg lasagne
Veg curry but unless you do a biryani it's also rice and sides
Bean chilli - again with rice and sides

Biryani is a good idea but I’ve made a few chicken biryanis recently.
Fish pie is a nice idea if I can find an easy recipe.

Brown onions and carrots in dish, add fish , smoked haddock, prawns, cod and diced cooked potato, mix in a cheese , white or parsley sauce, cover with buttery mash, sprinkle grated cheese over the top, grill, serve with crusty breads and brocolli.

Cook new potatoes and beans. (Or any other veg you like).
Pour over a jar of Lloyd Grosman tomato and basil sauce.
Lay thin pieces of cod on top.
Cook for about 5 minutes in the oven or until the cod is cooked.

Simple, quick and easy.

There is an old and easy recipe by Jamie O for salmon fillets cooked as a tray bake with tomatoes, olives, anchovies, basil and blanched green beans. I often use tenderstem broccoli instead of beans ( or as well as) depending on season.it works well for crowds and I serve it with bread as there are lovely juices. You could boil a few spuds if you wanted though.
Yotem O recipe for orzo with prawns and marinated feta is likewise easy for groups and quick to prepare .A green salad or greens with a sharpish dressing would go well.

Nigella's "speedy seafood supper" is a favourite of ours. We sometimes have it for Xmas Eve dinner. It's fast and easy but also special enough for company.
