Using up crudités left over from the company party

I ended up taking home massive amounts of cherry tomatoes, sliced green/red/yellow peppers, and carrot batons because I couldn't bear to see it chucked in the bin. I want to do something with it that I can freeze in portions. I suppose some sort of stew is the obvious answer, but if anyone has particular easy suggestions, I'd love to hear about them!

I have no picky eaters in the house but it needs to be meat-free. I'll do this tomorrow evening so I have time to simmer for a few hours if need be.

I'd make a base sauce for pasta. Onion celery and the above with garlic and stock.,,,mm.mmmmm

A nice pasta sauce, veggie fajitas, a chunky soup. And freeze some portions for roasting as and when.

I freeze peppers and thin carrot batons together with onion and broccoli for quick stir fries.

Thanks everyone! I hadn't even thought about just freezing the carrots and peppers, but that would certainly be the easiest option. (Darn, I wish there had been broccoli.)

I just found tortillas in the freezer, so the fajitas might be happening soon.

Make a shakshuka/ratatouille-type dish. Poach eggs in it and serve on good bread. Or rice, if you prefer. If you want to freeze it, do so before adding the eggs.

Make a lovely veggie curry with lentils. Freezes really well.

I would use the tomatoes, peppers and some of the carrots in a pasta or tagine sauce base.

With any remaining carrots I would make a carrot and coriander soup or carrot hummus.
