I’d go for Christmas pudding. I think it breaks up more nicely and feels less hard than mincemeat.

Do you mean Christmas pudding icecream, or just the pudding?
I have to say mince pie icecream doesn't appeal, it's the pastry I think, but I did have a recipe for Christmas pudding icecream. which I think it was a Nigella one. I seem to remember it was frozen in a loaf tin which was lined with cling film.
