What can I do with these salmon fillets?

I have two salmon fillets, and a cupboard full of herbs & spices. I also have a lemon, wild rice, broccoli spears, green beans, mushrooms, cherry tomatoes, a small lump of fresh ginger, and half a courgette. We have salmon fairly regularly and I usually either griddle it or bake it in the oven, but today I am lacking in inspiration!

Any ideas would be gratefully received. 🙂

Grilled with a teriyaki marinade (or not) and then put it in ramen?

I think I'd like something strong-flavoured as we both have Covid and can't taste all that much at the moment!

Tuscan Salmon is delicious, lots of recipes around for that, and you can add a lot of the veggies you've listed there.
It also goes well with fajita flavours and you could make up a Mexican veg rice to serve with it.

Teriyaki salmon is a weekly staple in our family. Kids looked suspicious until I explained it’s Japanese bbq sauce.

Pan fry with lots of pepper, then add teriyaki sauce. Make mush with wasabi to taste. Veg on side. Lovely and easy and wasaabi will help you with clearing the covid😁

You are all giving me ideas...

I can't go and buy any other ingredients because covid so I will have to use what we already have. I think there's some sweet chilli sauce in the fridge, and we have light soy sauce and tabasco, but that's it when it comes to sauces. Nothing to make a creamy sauce with either.

I would keep it simple - bake in oiled foil with the grated ginger, lemon juice and seasoning and serve with rice and the green vegetables .

Save the mushrooms and tomatoes for breakfast tomorrow .

I decide to bake the salmon in foil - I mixed up some grated ginger, a teaspoon of dried coriander, a sprinkle of smoked paprika, garlic and herb seasoning and the juice of half a lemon and poured that on top, and left it in the fridge for an hour to develop some enthusiasm. Then stuck it in the oven.I chopped up the courgette and fried it in butter for a minute or so, then put that in a dish with the tomatoes and baked for the last 10 minutes, and we also had steamed broccoli and the wild rice.

It was very nice, and thank you everyone for your suggestions.
