Favourite leftover chicken recipe?

Forgot I'd bought some chicken breasts and they were about to go out of date so I've just cooked them plain and refrigerated.
I always have loads of leftovers if I cook a whole chicken too.
Looking for favourite recipes to make with leftovers?
Tonight I'm going to add some to a pan of sauteed mushrooms, garlic and bacon and make a creamy sauce. Maybe top with mash & bake or have with pasta.
Any ideas for the rest? (I've portioned some up and frozen it already!).

That sounds delicious , I'm going to try that! I like leftover chicken in fajitas or in a korma with chickpeas and veg.

Sautéed with saffron pilau rice and peas( only add chicken at the end).

I'm doing this tonight with left over chicken added at the end. I also add sweetcorn to add extra vegetables. The kids always ask for this.

Thanks for the ideas! Completely forgot fajitas existed, that's next on the list! Last night's was delicious. Reheated chicken has a different flavour to fresh (to me anyway) so I like strong flavours with it- nandos rice is a great idea too.
