Currently living a really stupid life that mostly involves working when I'm home and travelling to see DS on the other end of the country.

When i have time i find it really handy to make ahead portable edible stuff i can sling in the freezer and retrieve for work or train breakfasts and lunches. Sometimes I do dhal and stew but actually atm I could do with stuff that doesn't necessarily need cutlery.

I have awesome breakfast burritos (pork mince chilli style) that are currently doing good service. I was wondering if anyone had any veggie packed wrap suggestions that can freeze?

No direct experience freezing these but both of these wraps sound delicious to me. I'd worry the papers wouldn't freeze well and leach too much water, and I'd substitute the fresh spinach for cooked spinach.

Bean burritos- refried beans, rice, peppers, onions, corn, cheese, salsa, sour cream, guacamole. Just adapt to your taste.

i would suggest breakfast but it seems you have that one covered.

I think a thick curry like dhal or chickpea and veg would work really well in a wrap.

Roast buffalo cauliflower with blue cheese dressing? I’d normally add crisp lettuce but I’m not sure it would survive freezing. Maybe spinach or white cabbage instead?

I used to do ratatouille wraps for lunch. Perhaps more of a summer thing though. And if you want to freeze maybe just roast Mediterranean veg would be better. With halloumi or feta or cannellini beans. And maybe mixed with garlic mayo.

Oh! I love cauliflower!! Also loving the idea of ratatouille/roasted Veg, I'm low on vegetables at the moment so that's a fab idea!

Following for inspiration! Will you please share your breakfast burrito recipe?

I'm not sure its as posh as a receipe 😛🤣 I read a load of breakfast burrito recipies and combined them together.

Makes (normally) 10 (sometimes I end up with a magic extra one)
500g 5% pork mince
2 cans of kidney beans
One tin of tomatoes (have used a leftover jar of salsa before)
Chilli seasoning to taste
100g (lighter) chedder
Your choice of wrap (whole thing comes in about 285cal using the tesco wholewheat tortilla from the Mexican food section)

Can add either scrambled egg (5 eggs) or avocado.

Fry up the mince kidney beans and chilli seasoning. Add the tomatoes.
Weigh the whole lot and divide by 10. Add the correct weight of filling + 10g cheese (+ 1/2 a scrambled egg or one slice of an avocado into 10 slices if required)
Wrap in baking paper and freeze. Reheat in microwave or airfryer
