Stew sounds nice but not sure on stock etc?

If i chop all the veg smallish and make up veg stock and can of toms and puree would it taste ok?

Soup.
Slice leek, dice carrots parsnips and potatoes - sweat gently in some butter and olive oil. Add a pint or two of chicken stock (a good chicken bouillon cube will do fine) and a tea cup (or two if you like really thick soup) of red lentils. Cover and simmer for 30 mins. Saute some pancetta, garlic, fresh herbs and small chunks of bread (to make croutons) and throw over the soup. I would blob a huge spoonfull of extra thick double cream before scattering the pancetta, croutons and herbs over the top if you have any in your fridge.

Chop onion and leek finely, fry in a little oil until transparent. Add an amount of curry powder depending on strength, and amount of dhal being made.
Add lentils and boiling water + stock. Cook for 10 minutes or so, stir occasionally and top up water as necessary
Cube other veggies and add. Chuck in some raisins if liked, and maybe some diced apple.
Cook until lentils are done - should make a sort of thick puree with veg bits.

I usually serve with rice, but also nice just scooped up with naan.

Very tasty and versatile. Dh thinks it looks like runny poo though.

How about a roasted vegetable lasagne? Have a veg box backlog at the mo and will be making this later.
