Oven broken - grill and stove top recipes please!

Ugh the oven is broken and won't be fixed for a few days.

Can anyone recommend any decent stovetop and grill recipes please?!

For teens and adults- need a low (ish) carb option for one of them too.

Breakfast for dinner! Eggs how you like them, cook tomatoes in a pan with some vinegar or Henderson's sauce, grill some hash browns, fry/grill mushrooms.

Low carb option could be Piperade with eggs, or shakshuka.

Butterfly chicken breasts rub with paprika and grill. Serve with salad and coleslaw or in pita for non low carb.
Gammon steaks with egg, pineapple and peas.
Sausage, mash and peas with onion gravy
Haloumi fajitas
Omelettes/fritata (finish in the oven).
Chicken stir fry
Cauliflower and chickpea curry
Salmon fillets with new potatoes and veg
Tuna nicois with tuna steaks

Poached or fried white fish fillet (fresh or defrosted not frozen) in cheese sauce, with bubble and squeak.
Kedgeree.
Omlette with lots of filling.
Mushroom risotto.

If you have a microwave, that's another string to your bow.

Also, you can do potato waffles in a toaster, for carb eaters. Take out of freezer, put into toaster on highest setting, when it pops up see if it's acquired any colour and if not do it again. I used to do this sometimes after a long day at work when my children were school age. Served with fried eggs, but would also go well obviously with sausages, beans, fish fingers and the like. I suppose you could do a vegetable with egg and waffles but I rarely bothered. We always had fruit in the house and other meals usually involved several vegetables, so I reckoned it would all come out in the wash.

Pasta and some sort of sauce - could you make/buy courgetti or similar for the low carb person?

I cook the vast bulk of our meals on the stove top. So things we're having this week that are stovetop cooking:

curry and rice (one Indian Bhaji style, one Thai style).
Spaghetti bolognaise or spaghetti and meatballs
Fish and stir fry (admittedly, I'm baking the fish, but frying it is fine if you don't have an oven or air fryer to hand).

Other regulars include:
fajitas
pasta with any kind of sauce. A no tomato sauce we like is a few chopped up sausages and fry lightly. Add some fennel seeds, chopped garlic and grated lemon zest. Then some wine and milk, bubble with a handful of frozen peas, add a dollop of creme fraiche)

Sausages and mash (I usually roast them but they can be fried and DH does that when he's just doing a couple for DD).
Burgers
Steak with new potatoes and steamed veg or steak in pita with a slaw and fried mushrooms
Fried rice
Lamb chops, mash, veg
Soup
