Cooking goose

Has anyone cooked goose the Jamie Oliver way?

Directly on the shelf, rather than in a roasting tin.

I'm tempted to cook it like that at Christmas but I have visions of it splattering the entire inside of the oven 🤦

Have you seen the amount of fat that comes off a goose? You’ll be swimming in it! You definitely need something to catch the fat in but what I’ve done before is out the bird on a rack with a roasting tin underneath.

And a
Couple of sterilised jam jars to save the fat which makes wonderful roasties

Yes, I anticipated needing a tray on the shelf underneath.
