Vegan Meal for Christmas Eve

I'm in need of some inspiration on what to have for dinner on christmas eve. We are having a christmas dinner of wellington, roast potatoes and parsnips, swede and carrot mash, braised red cabbage, sprouts, cauli cheese and pups in blankets on christmas day, and a buffet in the evening - boxing day, left overs and vegan cheese board, pickles etc.

Would like some thing a bit special on 24th too, but cant think what?

Ive often cooked cottage pie for xmas eve as its little cooking, comfort food and easy to make ahead and pop in the oven - a vegan cottage pie would be simple enough - but not sure if its special enough

We always have something spicy on Christmas eve. A selection of curries or a spicy noodle dish usually. Last year we had enchiladas with loaded nachos, proper guacamole and a few different salsas. Went down very well!

Another vote for spice! I really like the fact that it's nothing like what's to come in the following days. I'd do a couple of curries, maybe a Dahl. Then all the sides. Samosas, bhajis, naan, popadoms, mango chutney etc.

Thanks for all the suggestions! I had thought about mushroom bourginon with creamy mash and greens, but, wasn't sure it was too samey.

Liking the ideas of spice because, as you say, it's different to what we'll be eating over the following few days. Really liking the sound of the curries and mexican, think my kids would prefer the latter.

The cottage pie idea is really great, I usually end up making a few meals like this between christmas and new year as need some lovely comforting normal food for a day or two by that point😂

@Forgottenmyphone Thank you so much for those links, they all sound delish, have saved them and will give them a try at some point.
