  1. cook pasta, when cooked stir in grated garlic clove, butter, olive oil, salt, pepper, cut up lots of fresh plum tomatoes. Serve.
  1. Cut up chicken thighs with kitchen scissors into pot, freely add rice, add crushed garlic clove, olive oil, salt, pepper, chicken stock cube, bag of frozen veg from freezer. cook and serve

balanced, low upf, very simple and easy to prepare and cook

They sound nice, OP.

I hope you’re not inundated with ‘you say those are healthy meals, OP, but akshully I think you’ll find…’ style comments.

😅i was nervous about posting about a chicken stock cube, and i don't even use organic ones. 😱

I'm going to try these thanks!

Do you add any water to your chicken thigh recipe @eardefender, and if so how much please? (& how much rice??). Would love to try this.

coxesorangepippin · 29/11/2023 13:35

These sound good

My kids will happily eat chilli, no matter what veg it contains. Last night's version included celery, onion, mushrooms and peppers

UtterlyUnimaginativeUsername · 29/11/2023 13:36

You could replace the chicken in the second one with a tin of beans (butter beans for the win in my house), if you didn't have chicken. My 13 and 11 year olds would demolish either version, and they're fairly fussy.

eardefender · 29/11/2023 14:14

@tortiecat yes i do, i use no measurements at all, i just slosh in rice and water and work it out by hand and eye

@coxesorangepippin @UtterlyUnimaginativeUsername your children are way more cultured than mine, butter beans and mushroom would be a no. me and my husband were brought up to eat what you were given and we will eat pretty much anything and try things. I have no idea how we have managed to produce two such 'lords'. The only reason they will eat a varied diet of most things is because i have been ruthless with them.

I used to cut the mushrooms very small, blitz them in a food processor, and add them to rice. Same with spinach. The kids found out when they started eating mushrooms and spinach, in their late teenage years

No protein in meal 1 ?
