Does anyone please have a foolproof recipe please for a not too fancy soup, I need to make it for 8 people and I have never attempted it.
Thanks

A second vote for the Mary Berry one, it's lovely

I just make it up. Get a good sized squash and chop it into bits. Then put it in a pan, drizzle with olive oil and shove it into the oven for 20 mins ish until soft.
sauté an onion - then when the squash is done put the squash in with the onion and cover with stock. Let it all cook for a bit then blend with a hand blender. I always add fresh ginger - I just grate in a thumb sized piece.

I do one that's roughly equal amounts of Butternut squash and sweet potato, a couple of carrots (chopped very small, they seem to take ages to get as soft as the rest) a red onion (or 2 shallots), some garlic, teaspoon of dry ginger or a knob of fresh, half a teaspoon of whitell pepper and enough veg stock to cover it. Simmer until soft and blend. It's really tasty and easy. Also dairy and gluten free (although check your stock cube if using). Best served with brown soda bread on a wet, dark day.

I fry opinions soft, butternut squash with optional sweet potatoes , I add lentils to make it more substantial and often add some warming spices like cinnamon

Cook, blend , finish with a dash of cream or oat cream
