I'm doing a thanksgiving style dinner tomorrow and serving pumpkin pie.
I've made pumpkin pie before and it's been fine. I'll probably cheat and use a pre made pastry case. And I have a tin of pumpkin.
However, there's always masses of pumpkin filling leftover. All recipes I can find list 3 eggs. I could make 2 pies but I don't have much freezer space and there are only 4 of us.
Anyone got a scaled down recipe please?
