Enchiladas - standalone dish?

For a (casual) dinner party I was planning on serving birria enchiladas as the main with a fresh salsa and extra birria consume as accompaniments. For just DH and I that would do, but I was planning on serving with a basic green salad on the side too as we will have guests. Will that be fine? These guests have hosted us generously, so I don't want to be stingy, but equally the idea of adding anything else as well as the salad seems over the top - like bread/rice would have no place on the plate IMO, and extra vegetables redundant when there are two fresh and crunchy sides already.

I had enchiladas as a midweek meal last week with just a green salad and it was perfect. I think I'd either commit to the enchiladas as a main course with a simple green salad/salsa, or I'd have enchiladas as part of a spread where other vegetable, bean or carb sides (though much more work and might well detract from the star of the show). A halfway house where you have enchiladas with rice and salad is the worst of the options in my opinion.

We always serve enchiladas with salad or garden peas. They're definitely a standalone main.

I usually serve them just with salad but if I was serving to guests I would probably add a Mexican rice dish and nachos with guacamole and salsa

As a midweek dinner, certainly standalone

However, to host people I would do tortilla chips and guac for the table or with drinks before

I'd do a tray of nachos, guacamole, a corn salsa and some pink pickled onions/jalepenos.

Also I highly recommend saving some birria and the consommé to make some birria ramen, so good 😍!

Thanks everyone, I think the reason I doubted it was lasagne, another standalone dish. If I was doing that for me and DH I would just do lasagne + salad. For dinner party I would do lasagne + salad + focaccia/garlic bread, so I was looking to fill that bread gap. Seems like it will be ok by itself, could do tortillas and dips but they don’t ‘go’ to me and I already have arrival nibbles and starters planned. Or I could go absolutely wild and make a chipotle focaccia…

thanks for the tip. Just polished off a bowl with the last of the birria and consommé I had stashed in the freezer.
