Lunch inspiration/tracking thread

I love the weekly meal plan thread - really helps me to think about what I want, generates new ideas, reminds me of old ideas etc.

So thinking a lunch version? Less pre-planning I'm guessing but I know that I often get to lunch time and just have no ideas. Especially annoying as I try not to eat bread at lunch as I tend to be a toast/bagel and coffee kind of person in the morning so feel that MORE bread at lunch isn't ideal.

My thinking is we put on here what we are having /had for lunch that day. Possibly the next if you're organised enough to think that far ahead?

In my case, today I made a quick fried rice. I've never thought of that as a good idea for lunch but had some in the fridge that needed to be used up, and it was quick, easy and tasty. I think I'll make an effort to always cook a bit more rice when we have rice from now on so that I can have fried rice the next day for lunch.

On a Sunday I normally make some pasta and then do 2 different pasta salads for a couple of days.
On Tuesday evening I make couscous and quinoa and mix a variety of vegetables and herbs in and have those for a couple of days.
On Thursday evening I chuck whatever veg I need to use up in the airfryer with chilli and herbs and then blitz that for soup for Friday.

I am impressed with your forward planning @grayhairdontcare I admit, that's beyond me. I feel like meal planning dinners, and ensuring we have enough food in the house for breakfasts, lunch (including packed lunches) is about my limit! Grin.

today will have to be bread. Toasted cheese and tomato sandwich on sour dough. I'm quite looking forward to it - we haven't had any cheese for a while as for some reason I kept forgetting to buy it!

Joining in, great idea for a thread (I'll be sure to join the meal planning one too).
I'm a bit rubbish with lunch but really trying to make more effort. Yesterday I had a chicken and mushroom pasta pot (instant job- not ideal and not exactly inspiring!).
My favourites if I'm at home are jacket potato and beans or omelette if I want something hot, or cheese and crackers with other bits added as I go- pickled onions, hummus, rolled ham, cucumber etc for a cold option. Sometimes I'll have soup and oatcakes.
I like the idea of thinking ahead and sometimes will save a portion of dinner. Last week I had some leftover sausages in creamy mustard sauce and mashed potatoes. Also made a batch of leek, potato and mushroom soup- I blitz at the end so chopping was messy/minimal.
I love the sistema microwave pots for storage and reheating!

I think I’ll turn into a pumpkin if I eat any more pumpkin soup, so I’ll use up the feta left after making a frittata last night and have a salad instead. I’m sure I’ve got a half-used jar of olives at the back of the fridge too.

I take lunch to work and get hardly any time to eat it.

My current favourite is oatcakes with Castello cream cheese with pineapple and almonds / grapes / yoghurt / dates.

I tend to just have what I fancy after opening the fridge. I usually skip breakfast so have a bigger lunch

Yesterday was a quick noodle soup. Just cooked some noodles in stock, added chicken leftover from Sunday, handful of spinach, handful of frozen sweetcorn. Finished with a sprinkle of spring onions, crispy chilli oil and plenty of white pepper. I do something like this fairly regularly.

Today was a sort of Mexican style shashuka with avocado.

Tomorrow will be tonights kofta kebab leftovers turned into a sort of pitta pizza and side salad

Thursday will probably be either beans or mushrooms on toast

And on Friday I always make a huge pot of soup to cover weekend lunches for everyone, I'm thinking minestrone this week with pastina in as I think it lasts better than larger pasta. Friday is shopping day so I'll usually check the fridge to see what needs using up and then pick up anything extra I need.

turns out I don't have miso. Or noodles! Grin.

Went retro - tuna mayo with avocado on some crackers.
