Vegetarian stuffing

Can anyone share a recipe for vegetarian stuffing please? I usually use the packet stuff, and roll into balls so crispy on the outside soft in the middle.

Preferably without chestnuts.

It’s an American recipe, so some conversion from cups is needed, but I love this chunky bread stuffing. It’s really simple, just onion and herbs, but so tasty.

I haven’t made this one, which is parsnip and pecorino, but it sounds delicious and is on my list for the future (DH vetoed a change in recipe for Thanksgiving this years though). It’s also chunky, so different texture from a breadcrumb stuffing formed into balls.

I make Mary Berry's sage and onion stuffing, more or less.

It could be made with vegan marg/ butter.

I don't use stock or broth in it but I do stuff it inro the bird. You could moisten it with veg stock to hold it together.

I used Richmond meat free sausages and just mix it with stuffing dried mix and then add fruit and chopped nuts.

What are you after exactly? You could just use the Paxo packet stuff so is it that you want it more special or a different flavour or...?

I want a recipe. I don't want to spend any more money on upf which is glorified breadcrumbs. I should have specified for Christmas.

Well then any standard sage and onion stuffing recipe - breadcrumbs, onion, and herbs, salt and perhaps egg. Mary Berry's is good. You can tweak it with a dollop of cranberry sauce, or nuts or dried fruit, apple, figs etc even sun dried tomato and olive- it depends what flavours you're serving with it.
But I wouldn't think Paxo is really UPF. It's processed but the ingredients are what you'd use if you were making it yourself 🤷🏻‍♀️
