Just discovered a bag of dried cranberries in the cupboard

Expiry date is March 08. Would be a shame to waste them but I don't know what to do with them.
Any ideas please?

Annabel Karmel had a recipe for white chocolate & cranberry cookies which were delish. I'll try to remember to look it out for you.

through them into couscous salad, (red onion, apple, celery, carrot, lemon juice).

another tip: if they're all dried out, pour boiling water over them and soak for 15-30 minutes, drain. they will plump up nicely -- also works for raisins & sultanas.

I add them to breakfast cereal and they are also rather nice in flapjacks.

really easy cranberry and oat cookies

100g unsalted butter
75g caster sugar
1 egg yok
half teaspoon vanilla essence
50g dried cranberries
150g plain white flour
50g rolled porridge oats

oven gas 5/190 oc

mix butter and sugar
beet in egg yolk, vanilla and cranberries
stir in flour to make dough
make into small walnut size balls
roll each ball in oats to coat
press gently to help oats stick
place on greased baking sheet - press lightly with fork to flatten
Bake for 10-12 mins till browned

Yum!
