Recently read a great post here on how to make an amazing curry and the general consensus was lots of onions cooked slowly. This has been a game changer for me and my curries recently have been pretty good (if I say so myself!)

A favourite of mine at a restaurant though is saag paneer and I was wondering if anyone had any game changer recipes for this. My in-laws are coming over between Christmas and New Year and I'll be making curry and would love 1 options for them.

This recipe is my go to. It's drier than a traditional version, and tastes delicious. The spinach in it is still green and just wilted so has a lot a freshness, which can be welcome in a spread of heavier curries.

Fry red onion in ghee. Add Pataks curry paste. Tinned spinach from the Indian grocer. Soak paneer in boiling water before adding.
