Celeriac....

I've bought a smallish celeriac and thought I'd roast it whole....is this doable?
Do I need to add anything to it?
What temp and how long for?
I have a fan oven.

I've only ever made soup with celeriac - they make really good soup. So I'm hoping for other suggestions too!

I dont know about whole, that may take a while to bake. We normally cut it in square pieces, roast it and it is delicious!

I imagine you could make a gratin with it. I'm sure you could roast it, but definitely chop up rather than whole. I grew loads of celeriac in the garden this year and they make lovely creamy soup.

I’d not do it whole, that would take a long time. I mash mine, ie boil and mash with butter /cream or make celeriac chips, just cooked in oven. Cut into strips, sprinkle with salt and olive oil cook on high.

We make chips with it. Slice into thin chips and cook in olive oil, salt and pepper for about 20 mins on each side at 200*.

Jamie Oliver has a recipe for baking them whole. I'm sure it was on one of his programmes a while back.

To peel it, I cut off the knobbly/sandy bits with a knife. If there is thinner skin, I peel it, but generally it needs a good hack to get all the soil and roots off.

I use it lots of ways:

  • grated into a coleslaw
  • With a potato duphinoise, laying potato, celeriac, potato etc
  • Soup
  • Cubed and added into a stew

Last year, I did attempt to cook one whole. Followed the recipe which from memory had herbs and then wrapped in tinfoil and slow cooked in the oven. It was very disappointing, bland and hardly got eaten!
I've seen this recipe, but never tried it. It 'might' add more flavour if you did want to cook it whole.
