Long boring story so I've got x2 ricottas. The end.
What can I do? Not desserts.

Use one of them in this, and if you use fresh lasagne sheets no need to soak:

You can make Gnocchi from ricotta, wonder if it would freeze. Can see it being a great quick freezer meal with some tomato sauce.

Ricotta mixed with parmesan or similar is a common filling for ravioli - two tubs would be perfect for 4-6 portions. You would need a pasta machine, though, unless you’re patient enough to roll it thin enough!

2 tubs of ricotta, 2 tbs pesto per tub - mix.
Stuff the ricotta pesto mix into large pasta shells / tubes

Sauté onion, garlic, bit of chilli, once soft and starting to caramelise add jar of passata and a cup of water.

Plop the stuffed pasta into the tomato sauce, simmer until pasta cooked through

Garnish with fresh basil and Parmesan.

Stir into pasta sauces. It keeps for ages -longer than the date it says. So no mad hurry to use it up.
