I want to make some for a dear friend. I'm a decent baker but never tried Parkin
Hit me your best recipe and any tips for making and any tips for posting cake and getting it there in one piece ...😬😬😬.

Wonderful idea, I love parkin. I usually just look at BBC good food recipes and pick one. It gets better with age so maybe you could pack it tightly in a tupperware and post?

8oz self raising flour
8oz oatmeal
4oz lard
4 oz butter
8oz sugar
4oz golden syrup
4oz treacle
2tbsp ground ginger

Melt the fat and sugar and combine with dry ingredients. Loosen with milk or ale if too thick. Pour into a greased baking tray and bake at 140ºC for about an hour.

I can't remember where I got this recipe, or why the measurements are imperial and the temperatures are metric, but it's good!

@BlackForestCake as a veggie can I swap the lard for more butter?
Even pre veggie, I don’t think I’ve consumed lard since I left home in 1992!

DGM recipe was the best I’ve ever tasted, sadly we don’t know what recipe she used.

I made two lots recently. I'm sure I talked about on MN, but obviously not this thread, although I remember reading it before. I will just say that 2 tablespoonsful of ginger is a hell of a lot, that's nearly a whole jar-ful! My first attempt was too gingery (and I not a spice wuss). I have a shallow square non-stick dish. It's about 180 mm square at the top. These quantities were just right:

100 g butter (I actually use half butter and half ICan'tBelieveIt'sNotButter-type stuff)
100 g Golden syrup
43 g treacle
43 g soft brown sugar

Melt them.

145 g Plain flour
50 g Oatmeal
1 tsp baking powder
7 g dried ginger

Mix them

I egg
2 tablespoons milk

Beat them

Stir the flour into the syrup and sugar, add the egg and milk, give it good stir and pour it into the dish.

I reckon 45 mins at Fan 140 deg, turning once.
