Packed lunches I can make a few days ahead

I keep forgetting to make a packed lunch, or only remembering 5 minutes before I have to leave the house. I tend to chop up veg for snacks at the weekend, so I could make some lunches up then.
I don't really like sandwiches with just meat/cheese and no salad though I know you can freeze them. Also only like very limited range of pasta/rice salads.

Happy to cook something up though. Or just buy something I can divide up and have a couple of times in the week.

I make pasties but with bread dough instead of pastry.

This week I made them with potato, onion, cabbage and bacon, and usually just use up whatever I have in the fridge. Sautéed onion, grated carrot with some tomato puree is another favourite, and very cheap.

I make a batch, wrap them individually in foil and freeze.

They sound amazing. I may try that for the kids packed lunches. Do you get the ready rolled pizza dough or do you make bread dough?

@Angrycat2768 I make my own bread dough but I'm sure it would work with the pizza dough.

I got the idea from a Hairy Bikers recipe, they made a Cornish pasty version which is delicious.

No, the recipe I adapted was from one of their Hairy Dieter books, they used bread dough.

I've only used precooked meat, like bacon or ham, or made vegetable ones, so the timing isn't so critical.
