Broth based soup ideas

I made chicken and vegetable soup with leftovers from the Sunday roast on Monday, without pureeing, and teen DD absolutely devoured it, broth soups apparently win over pureed soups. I'll make this every time we have roast chicken, but does anyone have other brothy soup ideas or recipes? She's not fond of spice but anything else seems ok. I will eat whatever soup at whatever time.

I love chicken and stars soup , and the pasta makes it fairly filling. Not many places do the stars pasta (stelline/stellette) any more, but Sainsburys do.

Chicken poached in chicken stock and bay leaves. When cooked, shred the chicken and put it back in the pot. Add two tins of cannellini beans, spinach and some pesto to taste. You can add chilli flakes too but might not be her thing. Really easy and delicious.

You can get all kinds of tiny pasta in the Polish shops by us.

I make a super simple chicken stock and pasta noodle soup with a soft poached egg. Comfort food of the gods, you need really good quality chicken stock for this.

I also prefer a broth over a smooth soup, the family like most blended.

Greek-style Chicken, lemon and rice soup is lovely. I basically use a recipe for Avgolemono soup but will leave out the egg if I want a thin, more brothy soup and add some heavy cream instead.

Ottolenghi's Hawaii onion and chickpea soup is really delicious and perfect for this time of year. The recipe calls the cheesy toast optional, but it's mandatory for me!

Would she like something like ramen or laksa?

Red lentils, ham stock, diced carrots, swede, leeks and shredded ham hock. Makes a delicious, chunky winter broth.

I just made one for supper :
Butter
Celery
Onion
Leftover slice of bacon
Garlic
Deglaze with white wine
Chopped potato
Veg stock
Tin of cannellini beans
Seasoning, bit of parmaesan, bit of lemon zest and juice
Finley chopped cabbage and kale at the end
It was bloody delicious !

There's a lovely broth based soup with matchstick sliced ginger, carrots and spring onions, chicken breast, fine egg noodles, pak choi and peas, with lemon verbena leaves or lemon grass stalk, crushed and cooked in the broth then taken out before serving. put in lots of soy sauce and a tiny drop of sesame oil or chilli sauce for flavour but not too overpowering.

DH also makes a lovely green veg clear soup. Start with veggie stock and add any green veg you like - e.g. broccoli, leeks, edamame or baby broad beans, peas, mangetout or sugar snaps, courgettes, cavolo or spinach etc. Then stir in a big dollop of pesto before serving with crusty bread.

We make 'Nanny Plum' soup which is potatoes, carrots cheese and peas. It's really nice. I chuck a tin if tomatoes in too and whatever other veg is on the turn.

Another favourite is a Morocco chickpea soup that I think is on the BBC good food website.
