I'm going to make a chilli, any tips?

It's not something I've made often, only maybe 2 or 3 times before so not one of my staples.

Any tips to make it extra delicious? I've got some 99% dark chocolate to go in it already.

I did

red & white onion
garlic
red & green pepper
1tbs cumin, coriander, oregano, sweet paprika
mince
kidney beans
tomatoes
s&p, dried chillies, hot paprika
1tbs cumin, coriander, oregano, sweet paprika
mushrooms
worcestershire sauce
stock cube
dark chocolate
balsamic vinegar
bay leaves

Its simmering now, I'll taste it in a bit and if it needs anything else I'll add a tiny bit of coffee or a smidgeon of marmite.

The recipe in Nigella Express is amazing. You fry off about 100g of chorizo first and then cook the mince in the oil (leave the chorizo in too), it gives it an amazing flavour

Yes sorry, I just checked it, its picante ahumado so not sweet paprika.

Probably, but its got mince and kidney beans so its a chilli stew then, with extra veg.

I like chunky chilli - brisket ales a great chilli. I also use powder red onion and garlic instead of fresh, a couple of packs of packet chilli mix, stock and cook it in beer instead of tomatoes.

I also do a white chilli with chicken, canellini beans, crème fraiche and stock for the liquid.

I use brisket too.
Do you have a link for the white one?

Sounds a good recipe but I always sling a glass of red wine in and simmer for a couple of mins before the tomatoes! Smoked paprika adds a nice warmth as well.

I always add an Oxo cube and some jalepenos from a jar along with some of the vinegar from the jar. I've also in the past used a tin of cream of tomato soup when I'd run out of chopped tomatoes and it was actually really tasty!

I wouldn't go as far as to call them revolting, but some of the additives are, erm. unusual.
Adding Marmite, Oxo, Worcestershire etc to any dish is unnecessary as the flavour should come from the main ingredients, & makes it taste of the additive.

Red wine, smoked paprika and something sweet, either sweetner or cranberry or a bit of sugar. The tomatoes will be acidic. Also beef stock

Well mine was delicious and much better & healthier than the tinned stagg chilli I fancied the other week - but decided to make my own instead.

My only tip is to make it in a slow cooker. Whichever of the flavours listed you like most will be 100 times better in a slow cooker.

Half a teaspoon of allspice and a tablespoon of harissa sauce when you add the other spices.

If I'm making a really special chilli I will fry pieces of bacon with the onions!

start with sobrasada or nduja(use lean mince to counteract the fat), mexican style hot sauce, dark chocolate, red wine, cumin,various dried chillies (ancho, gualato, chipotle, roccoto), dried shallots, dried garlic, fresh lime juice.

If you're making corn bread to go with it, stir a little of the masa into the chilli too to thicken it.

If you are determined to have beans in your chilli, avoid Kidney beans and go with Black beans instead. Chunk beef works far better than minced beef, spice it with Cumin and Paprika at the point of searing. Chorizo adds a nice glossy sheen and a lot of flavour, and a lump of dark, bitter chocolate works as well.

Biggest difference is using good quality chillies over chilli powder. Most supermarkets do Chipotle/Ancho now, and it's easy to come by smoked and dried pre-packed stuff.

Mushrooms, courgettes etc have no business being in a chilli. 😮
