today two recipes I found online - various combinations of corn syrup / sugar / honey
Both of today's have a very sticky / gooey texture and not really fluffy like a marshmallow you'd buy in a packet. They hold their shape when cut and dusted but they are not light enough.
I don't know what I'm doing wrong?
Too much gelatin? Only have the leaves & recipes call for powdered but they should be able to be substituted I think?
Anyone got a foolproof recipe?
I've got the sugar syrup cooking down and have proper sugar thermometer - so it's not that!
