Why do hash browns taste different to chips, wedges etc?

If I were to fry hash browns in the same oil as chips cut up until bits, they'd still taste different.

Anyone share the science?

It's not science - unless containing different ingredients counts as science. Hash browns can contain any mix of onion, butter, flour, egg, salt and pepper - they're not just potatoes and oil

Because they are not the same. Hash browns are made with grated potato and a wet ingredient, usually butter or egg and is used to bind into cakes.
