Coriander salad dressing is bitter!

Making a salad dressing.

	1/2 cup raw cashews
	
	1/3 cup olive oil
	
	1 head fresh coriander 
	
	1/4 cup lime juice
	
	3 tbsp water
	
	1 tsp salt
	
	1 tsp garlic

I've followed the recipe. But it's bitter! What can I add?!!!

It’s the quarter cup of lime juice I reckon… your best bet is to try sugar like pp mentioned, but only a very little at a time!

Do you usually like coriander? I know some people find it very bitter, also I find salt can bring out the sweetness or try a drizzle of honey perhaps?

Yeah. Normally love coriander.

It's going with salad/salsa that has mango which might help. I'll add a little honey I think 🤷‍♀️

It's the olive oil, sometimes it makes it taste awful. Try adding sugar like pp suggested.

Ah, while I say I followed the recipe the ACTUAL recipe said avocado oil. Don't have any of that. Don't think I've tried it either

It's the olive oil - it's why it's not used for mayo etc as it overpowers

Oh. It might have been because I used olive oil AND a blender. Apparently blending olive oil oxidises stuff causing the bitterness.
