Reading it, it has red lentils in. Do you think we could use anything else instead?

I an cooking for someone who is allergic of legumes, which i think both of those are. I might need to look again.

If you can’t use lentils/chickpeas etc I think a standard vegetable curry in a slow cooker will go to absolute mush…

Glad you started this thread. I'm in the same boat , need more veggie dishes that are lentil and chickpea free for someone with an allergy !

What Lastqueenofscotland said. You don't need to cook vegetables for hours in a slow cooker, they’ll be ready in 20 minutes on the hob.

Ok.
So if I'm not using pulses, best to use a normal recipe.
